But every now and then, it ends up somewhere rather unexpected:

On the dinner table.

From shimmering flakes floating in champagne to gilded chocolates and elaborate wedding cakes, edible gold has become the ultimate culinary finishing touch.

It definitely looks impressive. But what exactly is edible gold? Is it really safe to eat? Does it taste like anything? And for precious metal enthusiasts, are you actually consuming something valuable?

Let’s dig in.

What Exactly Is Edible Gold?

Edible gold is high-purity gold specifically made and sold for use in food and beverages. It generally comes in three forms: ultra-thin sheets of gold leaf, delicate gold flakes or fine gold dust.

The important distinction is that this form of gold is food-grade.

Gold used in jewellery, coins or bullion is not automatically suitable for eating. Jewellery, for example, is commonly alloyed with other metals to make it stronger and more durable. Edible gold, on the other hand, is made specifically for culinary use and must comply with applicable food-safety requirements.

Is Gold Actually Safe to Eat?

In its approved food-grade form, high-purity gold can be used as a decorative food ingredient.

Metallic gold is remarkably unreactive and isn’t digested like ordinary food or absorbed for nutritional benefit. The tiny amount consumed as a garnish largely passes through your digestive system.

There is, however, an important difference between edible gold and something that simply looks gold. Craft foils, metallic powders and decorative products should never be considered edible unless they have been specifically manufactured and labelled for food use.

How Is Edible Gold Used?

Gold may not be bursting with flavour, or even add remotely anything in that department, but chefs have found plenty of ways to put it to work.

Gold leaf can be carefully laid across chocolates, cakes, pastries and even savoury dishes to create a dramatic gilded surface. Smaller flakes are often sprinkled over desserts or added to champagne and cocktails, while fine gold dust can be brushed onto macarons, chocolates and used as decorative details.

Because gold leaf is incredibly delicate, applying it requires a gentle touch. A sheet can cling to your skin or materials, fold over itself or tear easily.

A Luxury with a Long History

Although today’s golden desserts seem picture-perfect and suitable for the most glamorous of photo shoots, decorating food with gold is hardly a modern invention.

Gold leaf has appeared in elaborate European foods and banquets for centuries, where displaying precious materials was a sign of wealth and status. Gold also has culinary traditions elsewhere in the world. In Japan, for example, gold leaf can be found decorating specialty foods, confectionery, tea and sake.

Today, you no longer need to attend a royal banquet to find it. Edible gold has become a much more frequented ingredient, appearing regularly on restaurant desserts, celebration cakes, chocolates and cocktails.

How Do You Turn Gold Into a Leaf?

Gold is famously malleable, meaning it can be worked into extraordinarily thin sheets without breaking apart.

To produce gold leaf, the metal is repeatedly rolled and beaten between protective sheets until it becomes almost impossibly delicate. The finished leaf can be only a fraction of a micrometre thick.

That incredible thinness allows a very small quantity of gold to cover a surprisingly large surface. It also explains why handling gold leaf is so different from handling the jewellery, coins or bullion bars we normally associate with the metal.

What Does Gold Taste Like?

After all that effort, surely gold must add something extraordinary to the flavour?

Not really.

Edible gold is essentially tasteless and odourless, meaning it’s sole purpose is to enhance visual appearance. It won’t make chocolate sweeter or champagne more complex, but it can transform a bland-looking dish into something eye-catching.

Is Edible Gold Actually Valuable?

Edible gold can contain genuine high-purity gold, but each sheet is so extraordinarily thin that it contains only a very small quantity of metal.

When purchasing edible gold, you’re paying for more than its raw precious metal content. The price also reflects the specialized manufacturing, handling and packaging required to turn gold into such a delicate food-grade product.

Compare that with a bullion bar, where the quantity of gold itself represents a much greater portion of what you’re purchasing.

Same element. Very different purpose.

Perhaps that’s what makes edible gold so fascinating. One of the world’s most enduring precious metals can be a store of value, a piece of jewellery, a collector’s coin or, occasionally, the finishing touch on a chocolate cake.

It asks the question: where will gold go next?

Gold has spent thousands of years decorating crowns, jewellery, coins and treasured objects.
